Our Trevisano radicchio

600 g radicchio |

Directions
Prepare the dough of crêpes, by sieving flour into a bowl and adding a pinch of salt, 300 ml milk and finally two eggs. Let the mixture rest in the fridge and in the meanwhile start working the filling: wash radicchio, cut it into strips and let cook in a pan in which you have already melted 40 gr. butter. Salt, pepper and continue cooking for ten minutes.
In the meanwhile let Gorgonzola cheese melt in a pan, by the help of 50 ml milk and when it is creamy, add radicchio. Fill your crêpes with this mixture, lay them in a baking tin and season with melted butter. Complete cooking in pre-heated oven for ten minutes.
