Directions
Clean celeries, cut them into thick sticks and boil them in already salt water. In the meanwhile, mix the egg yolks with lemon juice and add, little by little, some hot béchamel, a butter knob, nutmeg and pepper.
Fill glasses with sauce and serve with still hot celery chops. This simple and delicious sauce can be tasted alone or served with second meat based courses.
