500 g spinach |
100 g parmesan cheese |
Directions
Wash and clean spinach; dry them with a cloth and let wilt in a pan covered with lid for some minutes, salt and pepper to taste. Put spinach into a tight-weave sieve and squeeze them by the help of the back of a spoon, without removing the exceeding liquid. Prepare a mixture with spinach, eggs, parmesan cheese, salt and nutmeg into a mixer; complete by adding pine nuts.
Butter four little moulds and pour the mixture into them; lay moulds in a high-edged baking tin (filled with some water) and cook in the oven for twenty-five minutes at 180°. In the meanwhile prepare a sauce by melting taleggio cheese in milk. Take flans out of the oven and serve with hot taleggio cream.
